3rd Annual March Madness Bake Off Recipes

Our first recipe was entered in the pasta category and was well received by the judges.

Karin's Pasta Asparagatus

3/4 lb spaghetti
2 lbs asparagus
4 cloves garlic minced
salt and pepper
6 slices of prosciutto (sliced in strips)
6 oz. fresh mozzarella-diced
basil leaves (fresh)
4 TB olive oil (+ extra for prosciutto)

1. cook asparagus for 3-4 mins. and cool in ice water.
When cooled, cut into 1 " pieces and set aside

2. Crisp prosciutto in olive oil and set aside

3. Cook pasta and keep 1 cup of pasta water

4. Heat olive oil in large skillet. Add garlic and saute for 30 seconds.
Add asparagus, salt and pepper. Add pasta, and if needed some pasta water.
Toss together. Add prosciutto, cheese and basil. Toss again.
Season to taste with salt and pepper.
